These Fluffy Vegan Pancakes are so soft and delicious, full of goodness, and easy to make. And, first time I ever actually made really good pancakes. I’m more of a waffle girl but these just might change my mind making me an equal lover of both
The recipe was inspired by Blueberry Vegan Pancakes by Choosing Chia so I really need to thank Jess for helping me to finally manage to make great pancakes, cause I really used to suck at it 😉
Tips for making these Fluffy Vegan Pancakes
- don’t overmix the batter (same as in vegan cakes) because the pancakes may come out chewy instead of soft and fluffy. If there are some lumps left, that will be totally fine.
- leave the batter to rest a bit before cooking them so there is enough time for the baking powder to do its job and for flax and chia to make the batter thicker
How to make these Fluffy Vegan Pancakes gluten free
Here I used spelt flour but buckwheat or some other gluten free works as well (you may want to add 1/3 tsp xantan gum). Also you can use regular flour or gluten free mix, which ever works for you.

Fluffy Vegan Pancakes
Equipment
- cooking hob
Ingredients
- 1 cup spelt flour
- 1 tbsp baking powder
- 1/4 tsp Himalayan salt
- 1 tbsp chia seeds
- pinch of vanilla
- 1 cup oat milk or any other plant milk
- 1.5 tbsp agave syrup or any sweetener of choice
- 1 tbsp melted coconut oil
- 1 tbsp ground flax seeds + 5 tbsp water
- 1 tbsp orange or lemon juice
Instructions
- Sift all the dry ingredients into a bowl, and add chia seeds
- Mix in a bowl ground flax and water
- Add coconut oil, syrup and juice, and lastly the milk
- Now add wet ingredients to dry ones and mix gently.
- Again, be careful not to overmix the batter
- Leave it to rest at least 15 minutes
- Grease the pan with coconut oil and heat it.
- Use 2 tbsp of batter for each pancake.
- I usually cook 3 at a timeCook them for a few minutes and when they start to bubble on the surface, flip them on the other side.
- I served them with yoghurt and date syrup plus blood oranges but you can go with anything you like

Zdrave palačinke od pirovog brašna
Ove su palačinke tako mekane i sočne da nebiste povjerovali da ih je moguće napraviti bez jaja i ostalih standardnih sastojaka za palačinke. Ali je, i vrlo je jednostavno.
Umjesto jaja sam stavila sjemenke lana i chia sjemenke, a prašak za pecivo ih je fino digao. Zahvaljujući tome bogate su i vlaknima te omega 3 masnim kiselinama. Ja sam koristila pirovo brašno ali za gluten free verziju možete koristiti i gluten free mješavinu ili heljdino brašno.
Ja sam koristila zobeno mlijeko, ali bilo koje biljno će poslužiti.
Bitne napomene:
- Pazite da ne miješate smjesu predugo i prežustro jer će palačinke ispasti žilave umjesto mekane
- Ostavite smjesu da se ‘odmori’ barem 15 minuta tako da prašak za pecivo može odraditi svoj posao kao i chia i lan (oni će povezati smjesu)
Još da se podsjetimo mjera i možemo na recept. Danas se jeftino mogu kupiti mjerice, recimo u IKEI ali ima ih i u trgovinama sa kuhinjskim posuđem i pomagalima (jedne sam kupila i u dućanu Bella Forma)
1 šalica = 2,37dl ili možete koristiti od 2,5dl ali ne punu do vrha
1 žlica = 1 jušna žlica
1 žličica = 1 čajna žličica

Vrijeme pripreme: 20 minuta
za 8 malih palačinki / ili 2 do 4 porcije
Suhi sastojci
- 1 šalica pirovog brašna
- 1 žlica praška za pecivo (ili 1.5 ako želite da budu deblje i još mekše)
- 1/3 žličice soli
- 1 žlica chia sjemenki
- malo praha vanilije (ne mora)
Mokri sastojci
- 1 šalica zobenog mlijeka (ili bademovog, ili bilo kojeg drugog biljnog osim rižinog)
- 1.5 žlica agavinog sirupa
- 1 žlica rastopljenog kokosovog ulja
- 1 žlica samljevenog zlatnog lana + 5 žlica vode
- 1 žlica soka od naranče ili limuna
Postupak
- Prosijte sve suhe sastojke osim chia sjemenki u zdjelu, zatim dodajte chia sjemenke
- Sameljite lan i pomiješajte ga s vodom i pustite ga da kratko odstoji
- Pomiješajte sirup, ulje i mlijeko i dodajte lanu
- Zatim mokre sastojke dodajte suhim i pažljivo pomiješajte. Može ostati sa grudicama, neće smetati ali ako prežustro i predugo budete miješali, palačinke će biti žilave. Zato polako i niježno 😉
- Pustite da smjesa odstoji bar 15 minuta
- Namastite tavu s malo kokosovog ulja i pecite palačinke na umjerenoj vatri 2-3 minute s jedne strane dok se ne naprave balončići. Zatim ih okrenite i pecite kratko s druge strane, oko minutu.
- Ja sam ih poslužila s jogurtom, sirupom od datulja i crvenim narančama. A moj muž ih voli standardno, s pekmezom od jagoda.
- Smjesa može stajati u hladnjaku dva dana.
