Buckwheat parfaits are one of my favorite breakfasts/desserts, so creamy and smooth. I paired it today with raspberry chia jam, fresh strawberries, my homemade Golden Granola and a sprinkle of hemp seeds for even greater nutritional value. The parfait gets quite thick if you leave it standing for 10 minutes or so. I love having it with fresh berries but basically any other fruits would do.
I love using buckwheat wherever I can: in cakes, waffles, pancakes and pasta in form of flour or in my smoothies and parfaits. Buckwheat is an amazing grain (actually it goes by pseudo grains) cause it provides a high quality and easily digestible plant protein, it’s gluten free and non-alergenic, contains abundance of antioxidants, vitamins, minerals and fiber. You can use it in raw and cooked form. Here I used raw groats. What you need to do when you use it raw for smoothies and parfaits is soak it overnight in water with addition of apple cider vinegar for at least for a few hours . This will start fermentation and make the groats easily digestible in this raw form. You have to wash it thoroughly before using the soaked groats in the recipe.

Ingredients
Buckwheat parfait
2/3 cup buckwheat (soaked in water with 1 tbsp apple cider vinegar)
1 cup homemade walnut milk (or any other plant milk)
1 banana
1 tsp baobab
1 tsp lucuma
1 tsp maca
pinch of vanilla powder
2 tsp coconut sugar
2 tbsp lemon juice
lemon rind
Chia jam:
1/2 cup frozen raspberries
1 tsp agave or maple syrup
1 tsp lemon juice
1 tsp chia
pinch of vanilla powder
Homemade granola
1/2 cup fresh strawberries or some other fruits (banana, berries, orange, pear…)
sprinkle of hemp seeds (optional)
Method
1. Soak buckwheat in water with apple cider vinegar on room temperature, best overnight
2. Drain the groats and rinse very well under running water
3. Put all the ingredients for parfait in high speed blender
4. Blend until very smooth and pour into a bowl
5. Prepare chia jam. Cook on low flame frozen raspberries mashing them on the way, add sweetener and chia and mix until jam forms.
6. Assemble the bowl: pour in the parfait and mix in some jam and top it with granola, sliced strawberries and hemp seeds

Great idea with this buckwheat parfait ?? in last time I’m still discovering new creations with this amazing groat- buckwheat 🙂 I will try this recipe as soon as possible but I would like to eat it now because it sounds sooo good :p

Yes, I agree, buckwheat is really a great grain. I started using it much more in my recipes since I discovered I could use it raw. Until then I mostly used it as flour in waffles, cakes…
