Refreshing, zingy, delicious and filling. A wonderful breakfast, snack, or even light dinner 😉
Adding fresh herbs and whole lemon gives such amazingly fresh flavour to smoothies. And Spring calls for those flavours so give it a go guys! These two delicious pastel smoothies are just two of numerous examples of my breakfast smoothies: as usual I went with a base of raw buckwheat or rolled oats that make them more filling and nutritious, with addition of fruits, herbs and seeds (usually flax or chia). If you ‘re after a light version, feel free to omit the grains.
One of my “super secret” ingredients is frozen drained lemon halves that I never throw away (as a part of trying to avoid food waste) but keep frozen in the fridge for everyday use in my smoothies. The rind is such a nutritious bomb and gives an amazing citrusy aroma to smoothies. I also always have at hand frozen overripe bananas and other fruits that give that perfect creamy consistency to them.
Ok, let’s proceed to the recipes 😉

Prep time: 5 minutes
Yields: 1 portion
Ingredients
Raspberry Basil
1 cup almond milk
1/4 cup raw buckwheat, soaked and drained
1 cup frozen or fresh raspberries
1 banana, fresh or frozen
1 knob fresh ginger
few basil leaves
1 drained lemon half
1 tbsp chia seeds
Blueberry Mint
1 cup almond milk
2 tbsp rolled oats
1 cup blueberries
1 banana
1 tsp golden flax seeds
few mint leaves
1 drained lemon half
Method
Place ingredients of each in a blender and blend until smooth.
As far as fruits go, it’s best to use at least one frozen, to keep the smoothie from warming up.
