Chia puddings are my everlasting obsession. My favorite breakfast by all means and my “on the road” food during my work travels as a flight attendant. This pudding is such a nourishing meal and chia seeds are nothing short of a miracle food. A nature’s power plant loaded with minerals, vitamins, protein, soothing for our digestive tract, hydrates the body and helps our muscles to recover after physical activities. So, numerous reasons to try it, if the fact that it’s super delicious isn’t enough. Now, my favorite of the moment: Chocolate Chia Pudding with homemade chocolate granola. This one could easily go under dessert category cause it’s so darn delicious and sweet.
Chia Pudding
This is a basic recipe for chia pudding you can use with other layers and ingredients.
2 tbsp chia seeds
1/2 cup plant milk (walnut, almond, oat, rice)
1 tsp maple syrup/agave syrup
Mix chia seeds and syrup into the milk and stir a few times until the seeds are well distributed in the liquid. You will have to keep stirring every half a minute or so until the gel starts to form. This will be done in 3-5 minutes. Let it sit for at least half an hour. I usually leave it overnight.

Chocolate Chia pudding
Ingredients
1 cup chia pudding
2 cups plant yoghurt (I used coconut-soy)
1 tbsp @superelixir Chocolate Protein Powder (or 1 tbsp cocoa + 1-2 tsp maple syrup)
1 cup homemade chocolate granola
Method
1. Mix 2-3 tbsp yoghurt into prepared chia pudding
2. Divide the rest of yoghurt into two parts and add protein powder or cocoa and sweetener into half
3. Now layer it: granola / chia pudding / chocolate yoghurt / yoghurt / granola
There’s another ingredient that goes perfectly with this: a layer of banana coins so feel free to add it on top of chia pudding, before chocolate yoghurt.
