This Easy No Yeast Vegan Bread is so super quick and super easy to make. The preparation will take you 15 to 20 minutes and the baking takes 35 minutes. All this meaning, it will be less than an hour from start to the finished and ready bread for you to taste. I have to admit, I’m not big on making bread in general as I’m kind of too lazy to do all the proofing, kneading, waiting… it also scares me a bit, haha. So that is one of the reasons why I’m so happy to have this recipe. It is also wholesome, made with spelt and rye flour, oat milk and abundance of healthy seeds, which is also immensely important to me.
What kind of bread is this Easy No Yeast Vegan Bread
This is essentially a recipe for a traditional Irish Soda Bread which I veganized and made wholesome adding subbing some of ingredients like butter, milk and white wheat flour with more wholesome and/or vegan ingredients. In it the absence of yeast is replaced with adding baking soda and something acidic like vinegar or lemon juice. That’s why there’s no need for proofing the dough. It can go straight into the oven.
What do I need to make this Easy No Yeast Vegan Bread?
To make a traditional Irish Soda Bread (check out this recipe), you need flour, soda, eggs, vinegar, salt, sugar, milk and butter. and for this Rye and Spelt wholesome version you will need:
- Rye and Spelt flour (or flour of your choosing)
- vegan butter or olive oil / update! I tried chilled coconut oil and it worked perfectly! Check Buckwheat No Yeast Bread with Walnuts for more details
- brown sugar
- baking soda
- salt
- oat milk (or any plant unsweetened kind)
- apple cider vinegar
- pumpkin seeds
- sunflower seeds
You can also use nuts or dried fruits like raisins and cranberries instead of seeds, but I do recommend adding something as it makes the bread more moist and delicious. If you do not use anything, it can come out quite dry.
How easy is it to make?
Very. You should be done preparing it in 15-20 minutes. You literally place dry ingredients in the bowl, rub in the cold butter, add milk with vinegar, mix with a spatula, transfer onto a well floured surface and roll and flip the dough until floured enough so it doesn’t stick. And then bake. Yes, so easy. No proofing or serious kneading needed. Just this morning I made two loafs in less then 30 minutes. Definitely beats going to the store to get some, especially now that we’re confined to stay at home.

The process of making this Easy No Yeast Vegan Bread in pictures
- Place all dry ingredients except the seeds in a bowl. i recommend that you sift them as always in baking as you get better results.
- Cut the cold butter using the knife in very small cubes
- quickly rub it in with the flour using your hands
- Then add seeds and wet ingredients
- Using a spatula or a spoon mix until the ingredients have been incorporated into a wet dough
- Transfer the dough onto a very well floured surface
- Roll it and flip adding the flour util it is no longer too wet to handle. Be careful not to over knead it.
- Shape into a bread, transfer to baking pan lined with parchment paper
- Make an X on the dough using a sharp knife – this is done to ensure more even baking
- Bake in oven preheated to 190C or 375F for 30 minutes
- Check with a toothpick if it’s done. It should be nice and golden on top and the toothpick should go straight through and come out dry.

- 1 cup spelt flour 140g
- 1 cup rye flour 140g
- 1 tsp Himalayan salt
- 1/2 tsp baking soda
- 1 tbsp brown sugar
- 1/3 cup pumpkin seeds 50g
- 1/3 cup sunflower seeds 50g
Wet Ingredients
- 220 ml oat milk
- 1 tbsp apple cider vinegar
other
- 1/4 cup well chilled vegan butter cut in small cubes or use 3 tbsp chilled olive oil
Instructions
- Place all dry ingredients except the seeds in a bowl. it is best to sift them.
- Add vinegar into the milk
- Cut the cold butter using the knife in very small cubes
- Rub it in with the flour using your hands
- Then add seeds and wet ingredients
- Using a spatula or a spoon mix until the ingredients have been incorporated into a wet dough
- Transfer the dough onto a very well floured surface
- Roll it and flip adding the flour until it is no longer too wet to handle
- Shape into a bread, transfer to baking pan lined with parchment paper
- Make an X on the dough using a sharp knife – this is done to ensure more even baking
- Bake in oven preheated on 190C or 375F for 30 minutes
- When done it the bread should be nice and golden and when inserted a toothpick it should come out dry
Brzi kruh bez kvasca
Super jednostavan za napraviti, a spreman za pečenje za 15tak minuta. Ne treba se dizati niti dugo mijesiti. I ne trebate kvasac kojeg navodno niti ne možete trenutno kupiti u trgovinama.
Napravila sam ovaj recept na bazi klasičnog Irskog kruha sa sodom za koji inače trebate brašno, jaja, mlijeko, ocat, šećer, sodu i sol, a ja sam se malo poigrala sa sastojcima i dobila ovaj fini cjeloviti kruh.
Evo i recept pa probajte
Sastojci:
- 1 šalica / 140g pirovog polubijelog brašna
- 1 šalica / 140g raženog brašna
- 220ml mlijeka / zobeno
- 1 žlica jabučnog octa
- 1 žličica soli
- 1/2 žličice soda bikarbone
- 1 žlica smedjeg šećera
- 35g hladnog maslaca narezanog na sitne kockice / ili 3 žlice hladnog maslinovog ulja)
- 1/3 šalice / 50g bučinih sjemenki
- 1/3 šalice / 50g suncokretovih sjemenki
Postupak:
- Prosijte brašna, sodu i sol u zdjelu (ili samo stavite ako nemate kroz što prosijati).
- Pomiješajte mlijeko s octom.
- Narežite nožem maslac na sitne kockice i dodajte u brašno. Razmrvite ga s brašnom i onda dodajte sjemenke i mlijeko.
- Kuhačom miješajte dok se poveže. Smjesa će biti dosta mokra.
- Dobro pobrašnite pult i istresite tijesto. Pobrašnite odozgora i valjate ga i preklapajte. Dodajte brašna po potrebi dok se ne prestane jako lijepiti. Nemojte predugo mijesiti. Kad je relativno čvrsto, prebacite na pleh obložen papirom, zasjecite ga odozgora nožem u X. Ovo radite da se bolje ispeče iznutra.
- Pecite u pećnici zagrijanoj na 190C oko 30 min. Provjerite je li gotov tako da umetnete čačkalicu. Ako izadje suha, gotov je.

It is usually very wet but it doesn’t have to be very firm either as it is not kneaded as “normal” bread. It comes out fine when baked.
