Chocolate Hazelnut Rice Cream

A delicious creamy chocolate dessert but also a healthy and nourishing meal. Isn’t that what we all want? This light vegan cream is an ultimate healthy dessert, made only with wholesome, plant based and nourishing ingredients. The Chocolate Rice Cream is packed with super healthy ingredients like wholegrain rice, chia seeds, coconut oil, raw cocoa… and it’s refined sugar free, gluten free and darn delicious 🙂

I already shared a rice cream with you that I created a few years ago. That recipe came to be as kind of spur of the moment kind of thing, as many of my recipes often are. We had just had lunch, my hubby and daughter wanted something sweet and of course, chocolate-y, and since there was some leftover wholegrain rice in the fridge I thought of making some kind of chocolate cream with rice base. I threw in what I thought would go nicely together and there it was: super smooth, bitter-sweet chocolate deliciousness. And no way you could guess it was made of rice.

Many times I’ve made it since, in different versions, even for dinner parties and no one ever guessed! Never, ever! Trust me, it is as decadent tasting as the heavy ones made with dairy, butter or egg base, with a difference that it will leave you happy and light, as opposed to feeling overeaten and in my case, nauseous. Also it’s super easy to prepare and made with only 5 base ingredients. This time I wanted to make it even more nourishing so I added chia seeds, extra virgin coconut oil and Maca powder.It will take you 10 minutes to prepare if you already have cooked rice and roasted hazelnuts on hand.

To roast the hazelnuts, place them in a pan and roast on 150 celsius for 10-15 minutes until the skins start to crack and the nuts get slightly browned. Easiest way to skin them is to put them in a clean cloth and rub until they fall off (or just rub them in your palms after they cool off9.

Ok, now I’m guessing you might be ready to give it a try.

You will need a the high speed blender or a food processor if your blender isn’t powerful enough. I used my Electrolux Masterpiece since I’ve become Electrolux brand ambassador recently. In fact this was the first time I used my new blender for making a thick cream like this one and I was super happy.

Preparation time: 10 minutes
Yields: 4 small portions (or three larger)

Ingredients

1 cup cooked wholegrain rice
1/2 cup roasted and skinned hazelnuts
1 tbsp chia seeds
1,5 cup milk (hazelnut, almond, soy or any other plant milk)
1 tbsp coconut sugar
1 tbsp agave syrup (or less if you want it less sweet)
1 tbsp melted virgin coconut oil
3 tbsp cocoa powder
1 tsp Maca powder (optional)
1/3-1/2 tsp vanilla powder
pinch of salt

Method

1. Place all the ingredients in the blender.

2. Blend gradually until you reach a smooth consistency

3. If needed, add a bit more milk
4. Pour in small cups or jars and sprinkle with some chocolate or chopped hazelnuts

5. decorate with cherries or strawberries
6. Chill before serving. It will become more mousse-like
6. It should keep in a fridge up to three days

    How does whole grain rice looks like? Like rice we eat in main dishes? Like Thai rice?

      Hi!

      whole grain rice is a bit darker in color and there are all sorts of them: short grain, long grain, even basmati
